Gulab Jamun Cake is a pure bliss. It is an amazing fusion cake with great Indian flavours.

Gulab Jamun is one of the most famous and favoured dessert or sweet in India. It is in fact, the most served dessert during the Indian weddings, parties and festivals. I believe, it is favorite of everyone, as I have yet to meet a person who doesn’t like gulab jamun.
Gulab Jamun cake is a fusion cake. It has all the great flavours of gulab jamun in a lovely structure and taste of a cake.
What is Gulab Jamun?
Gulab Jamuns are small fried dumplings made with milk solids and then dipped in flavoured sugar syrup. They make for a lovely treat for any occasion. They are immensely popular in India. You can find them in any big or small sweet shops.

They can be very easily made at home too. Gulab Jamuns are made with dried milk (milk solids). For this you can either cook and evaporate milk at home and dry it completely or you can get khoya easily available at the sweet shops. Knead the khoya well and then make small balls with this dry milk solid (khoya) and then fry them in hot oil or ghee. Later they are dipped in saffron and cardamom flavoured sugar syrup until they are juicy till center. Some add a little flour too while kneading the khoya.
There are a few other ways also, of making gulab jamun. They can be made with semolina, bread or even with potatoes. All these are instant ways of making gulab jamun. I have an Instant Gulab Jamun recipe in my blog too. It is a very quick version of making gulab jamun at home.

Gulab Jamun Cake
This Gulab Jamun cake is a mind-blowing fusion cake. The awesome flavour of Gulab Jamun, in a cake is so delectable you won’t believe you are eating a cake. Yet, the soft sponge of the cake is enough to bring you to believe that it is indeed a cake.
I made Rasmalai Cake earlier and was dying to try this one as Gulab Jamun is my favorite sweet. I made it on the special occasion of my lil one’s Mundan ceremony. Because of this pandemic we had a small and simple ceremony at home and just thought of making it extra special by baking this cake.
This cake indeed makes for a great celebration sweet or dessert or cake…call it anything, but its just simple awesomeness served with love!

Important Points for making Gulab Jamun Cake
Let us take a look at a few things to be kept in mind for making a perfect Gulab Jamun Cake.
Gulab Jamun – The most important ingredient for this cake is Gulab Jamun. You can make them at home or buy them from market. As mentioned above, you can try my Instant Gulab Jamun recipe too. Just lightly squeeze gulab jamuns before you put them in cake. Also, you can use them as whole or cut into small pieces and attractive shapes, for decoration on the cake.
Cake – The cake base that I have made is an eggless cake and very easy to make. It is made with milk and comes out really great. You can bake the cake in oven or on gas stove too. Also, as this is an eggless sponge cake, do not over beat the batter, because then it won’t rise at all. Please see the video below, to check how to beat or mix this cake batter properly.
Whipped Cream – Keep the whipping cream out of the fridge, for a good about 2-3 hours before you have to whip it up. Keep your bowl and whipping attachments in the fridge to chill before you start whipping. Add a little corn flour or milk powder or icing sugar to stabilize the whipped cream.
Gulab Jamun Syrup – Whether, you are make gulab jamun at home or get them from market, the sugar syrup of this small little heavenly sweet comes handy. It is great for soaking the cake layers and provide the extra flavours of the gulab jamun in the cake sponge.
Nuts – You can use almonds, pistachios and cashew nuts for decoration purpose and also to add the extra crunch to the cake. I have used almonds and pistachios in the gulab jamun cake. Rose petals also make a great decoration on this cake.

Ingredients
- Oil – 1/3 cup
- Butter – 2 tbsp (at room temperature)
- Milk – 1 cup
- Kewra Essence – 1/2 tsp
- Refined Flour – 1.5 cup
- Baking Soda – 1/2 tsp
- Baking Powder – 1/2 tsp
- Cardamom Powder – 1/2 tsp
- Powdered Sugar – 2/3 cup
- White vinegar – 2 tsp
- Rooh Afza squash – 1 tbsp (or rose essence 1 tsp)
- Pink food Color – few drops
- Gulab Jamun – 7-8 pieces (with syrup)
- Whipping Cream – 1 cup
- Corn flour – 1 tbsp
- Pistachio and almonds for garnish
- Gulab Jamun Syrup for soaking – as reqd
Method
1.Make the eggless cake sponge

Mix oil, butter, milk and kewra essence together in a bowl. Sieve together refined flour, baking soda, baking powder and cardamom powder in this wet mixture. Mix everything nicely. Add powdered sugar and mix again. You can beat this batter until this step as we have not added vinegar. Once the batter is mixed nicely and is without any lumps, add vinegar and then mix gently without over-beating. Pour this batter in a greased tin and bake in a pre-heated oven at 185 degree Celsius for about 30-35 min or until done. The time might vary as per your oven settings. Once the cake is done, let it cool outside for 5 min and then unmould it from the tin and cool it completely on a wire rack.
2. Whipping Cream

Take 1 cup whipping cream (at room temperature) in a bowl. Start whipping it at low speed for a few seconds and then at high speed. Once you see that it is starting to foam up, add the corn flour and whip on high. Just in few minutes, you will reach soft peak stage of the cream. Add 1 tbsp Rooh Afza syrup or squash. Also Keep scraping the bowl in between to bring all the cream in the center. Whip the cream to stiff peaks add a few drops of pink gel food colour and mix well. Once the cream has whipped up to the stiff peaks, stop whipping it further.
3. Decorating Gulab Jamun Cake

Cut the cake in to two layers. Soak the first layer with gulab jamun sugar syrup. Spread some whipped cream and put gulab jamun pieces. Add some more whipped cream on it and spread evenly. Put the second layer of cake and soak it with sugar syrup. Spread whipped cream evenly on top and all sides of the cake. Make some rosettes or design on the sides and on top of the cake. Decorate with gulab jamun and nuts like almonds and pistachios.
