What is a Chatni ?
Chatni is an accompaniment which goes well with basically any main dish. In Indian sub-continent chatni / chutney is something that brings life to any meal.
In western countries it is popularly known as dipping sauce or dip sauce.
It is made with various raw ingredients which has intense flavour and adds that extra zing to the food.
High on spice level and is pretty hot…
and is totally droolworthy…
Not to be missed at all…
The most common ingredients of the chatni / chutney are coriander leaves, mint leaves, onion, garlic, ginger, tomato etc.

This Tomato Chatni
The tomato chatni recipe that I am sharing in this blog is a very easy and quick recipe.
It needs just some basic ingredients.
It is very versatile and can be easily customized to suit your palate.
Unlike many other chatnis, it is cooked and is thus easy to store for longer periods.
This tomato dip is sweet, spicy and everything that you would like with your snacks and breads.
Do give it a try once, I can bet on this recipe that you would love it and make it very often.

Important Points for Tomato Chatni
1.Tomato – For this chatni you must take red and juicy tomatoes. The local varities of tomato would be best for this tomato dip. The hybrid tomatoes are not sour enough and thus the chatni made out of them will loose some points on taste. So better to go with the sour, juicy tomatoes.
2.Ginger – Ginger is an important ingredient for this tomato chatni recipe. The peppery taste and spicy aroma of ginger is what gives that zing to this tomato dip. You may alternatively use ginger past in this recipe if you don’t find fresh ginger in your area of residence but then it will loose on its taste factor. Fresh ginger is what I would recommend you to use in this recipe.
3.Green chilli – To increase the hotness of this tomato chatni, green chillies are used here. Finely chopped green chillies are used in this recipe. Green chillies are optional though. If you don’t like hot chatnis or sauces then you should totally skip it or if you like less spicy food then reduce the quantity of the green chilli.
4.Sweetness – This tomato dip is sweet, spicy and sour. For sweetness we will add some sugar. You can use jaggery powder or any other alternatively for sweetness. Also the quantity of sugar can be adjusted as per your taste.
5. Oil – For cooking this dip you can use any cooking oil you prefer. Even mustard oil will give it a great flavour and taste. But if you use mustard oil then you must first cook it on high and when it smokes then you allow it to cool down completely. This way you need to cook it first and then heat it again for cooking this chatni.
6. Mustard Seeds – Mustard seeds will be used in this recipe. They give a wonderful aroma and taste to the chatni.

Ingredients
- Tomato – 4, raw
- Ginger – 2 inch piece
- Green chillies – 2
- Mustard Seeds – 1 tsp
- Red Chiili powder – 1/2 tsp
- Cooking oil – 1 tbsp
- Sugar – 1 tbsp
- Raisins – 2 tbsp
- Dry Coconut – 2tbsp, thin flakes
Method
1.Make a paste of tomatoes in mixer jar. Grate ginger finely or make a paste of it in mixer. Finely chop the green chillies.
2. Heat oil in a pan. Add mustard seeds and let them crackle.

3.Add red chilli powder and tomato paste. Add salt to taste. Mix everything nicely.

4. Cover and cook for 2-3 minutes. Then add chopped green chillies and grated ginger paste. Mix everything, cover than pan partially (as shown in video) and cook for 2-3 minutes.

5.After 2-3 minutes the tomato paste is cooked nicely and a little dry also. Now add sugar , mix it and cook until sugar is dissolved properly.

6. Add raisins and dry coconut flakes. Tomato chatni is ready.

Note : You may adjust the hotness by reducing the chillies or chilli powder. Also the consistency of the chatni / tomato dip can be adjusted by adding more water to it.
